Sets (small dormant bulbs, roughly nickel-sized) are the fastest path for beginners. The tradeoff: limited variety selection — typically yellow, red, and white — and a higher bolt risk if the sets were cold-stored before you bought them. Seed-started transplants take more lead time — start seeds 10 to 12 weeks before your last frost date, usually in late January or February for most of the northern US — but give you the widest variety access and the largest potential bulbs. Before you buy seeds or sets, match your variety to your latitude. This is the single most consequential decision in onion growing, and the most commonly skipped.

Onions don’t form bulbs in response to warm weather or how long they’ve been in the ground. They bulb when their leaves reach a critical size and day length hits a genetically programmed threshold. Short-day varieties begin bulbing at 10–12 hours of daylight. Intermediate-day varieties need 12–14 hours. Long-day varieties require 14–16 hours before they switch from leafy top growth to bulb formation.

The biology behind this involves a family of genes called FLOWERING LOCUS T (FT) homologs. Leaf blades act as the light sensors; when they perceive the critical day length, a bulb-promoting signal from genes like AcFT1 travels to the base of the plant and initiates the bulb. Under short days, a suppressor gene called AcFT4 actively blocks this signal. A long-day variety planted in Georgia will never form a proper bulb no matter how long it stays in the ground — the suppressor stays active until those 14-hour days arrive, which they never do that far south.

Planting a short-day onion in Minnesota means bulbs start forming in early spring when the plant is still tiny — golf-ball-sized results at best. Planting a long-day onion in Louisiana means bulbs never form at all.

When to Plant — The 50°F Bolt Rule and the Summer Heat Deadline

Two separate timing constraints govern onion planting. Most guides mention one; both matter to your harvest.

The bolt risk from cold exposure. Onions become susceptible to vernalization — the physiological trigger for flower-stalk formation — once they reach approximately five leaves and are then exposed to temperatures below 50°F for three to four weeks. Once vernalized, the plant prioritizes seed production over bulb formation. University of Maryland Extension states it plainly: “Planting too early, with exposure to cold temperatures, can cause seed stalk development.”

Large onion sets carry heightened bolt risk because they’ve often been cold-stored, giving them partial vernalization before you even plant them. If you suspect your sets were cold-stored, the University of Missouri Extension notes that holding sets at temperatures above 80°F for two to three weeks before planting can reverse vernalization. If bolting occurs despite precautions, pull those plants immediately and use them as green onions rather than waiting for a bulb that won’t develop.

The summer heat deadline. Once soil temperatures regularly exceed 85–90°F, onion tops die back and bulbs stop sizing up. You’re racing to accumulate as many growing weeks as possible before that cutoff, which means early planting — but not so early that sustained cold below 50°F triggers vernalization.

The practical rule for most northern gardeners: plant sets or transplants two to three weeks before your last expected frost date, once soil has warmed to at least 50°F. In zones 5–6, that typically means April. In zones 3–4, wait until late April or early May. Starting seeds indoors in January or February gives transplants the largest possible head start without that bolt risk.

Soil Preparation, Spacing, and Planting Technique

Onions feed through shallow roots — most nutrient uptake happens in the top 6 to 8 inches of soil. Loose, well-aerated soil lets bulbs expand without resistance; compacted soil limits final size regardless of how well you manage everything else.

  • pH 6.0–6.5 — slightly acidic. Test before planting; amend with lime to raise pH or sulfur to lower it.
  • Well-draining loam — heavy clay causes neck rot. Work in 2–3 inches of compost before planting.
  • Avoid fresh manure — use well-rotted compost only; fresh manure introduces bacterial contamination risk.

Planting sets: push them point-up into a furrow about 1 inch deep with just the tip visible at the surface. Space 4–6 inches apart for full-sized bulbs; plant 2 inches apart if you’ll harvest some early as green onions. Row spacing: 12–18 inches.

Shallow cultivation (no deeper than 1–2 inches) or organic mulch keeps weeds manageable without disturbing roots.

Feeding and Watering — Stop Nitrogen Before It Works Against You

Nitrogen is essential for onion leaf development — and counterproductive once bulbing begins.

Apply a balanced fertilizer (10-10-10 at 2 lb per 100 square feet) before planting. Side-dress with nitrogen four to five weeks after transplanting — UMN Extension recommends urea (45-0-0) at 0.25 to 0.5 lb per 25 feet of row. Stop all nitrogen applications once you see bulb swelling begin at the base. Late nitrogen delays maturity, causes thick necks that don’t cure properly, and produces soft bulbs that rot in storage.

Harvest Timing, Curing, and Storage

Begin checking for harvest readiness when about half of the tops have fallen over and turned yellow or brown. Undercut bulbs with a spading fork at the 50% mark rather than waiting for all tops to fall — mature bulbs sitting in wet soil after top-fall develop neck rot quickly. NC State Extension uses a 50–80% neck fall range as the harvest window; err toward 50% in wet or humid seasons.

After lifting, cure onions in a warm (75–90°F), well-ventilated space for two to four weeks. The goal is to dry the outer skins and seal the neck completely against decay. Can I grow onions in containers?
Yes — use at least a 12-inch-deep container with drainage holes and a compact variety. The day-length rules still apply regardless of container use, so match the onion type to your latitude. Containers dry out faster than garden beds, so plan to water every one to two days during hot weather.

Why did my onion sets produce flower stalks instead of bulbs?
