Whole Leaf vs. Already-Extracted Gel: Two Different Clocks

Most storage advice treats ‘aloe’ as one thing, but a whole cut leaf and the clear gel scooped out of it age at markedly different rates, and conflating the two leads to either wasting a usable leaf or trusting gel that’s been sitting out too long.

We didn’t find a controlled study measuring whole-leaf storage specifically, so treat that range as practical consensus rather than a tested figure. The rind itself is doing real, explainable work, though: it’s a physical barrier that limits the oxygen and light exposure driving both decay pathways above, similar to how a whole apple outlasts a sliced one by weeks. Wrap the cut end in plastic wrap and refrigerate the leaf whole; only fillet out the gel when you’re ready to use it, and the one-week clock starts at that point, not when you first cut the leaf from the plant.

One more distinction matters here: the yellow, bitter sap just under the rind — the latex layer containing most of the aloin — is a different substance from the clear inner gel, and it’s the part most associated with skin irritation in sensitive users.
