A nectar plant is any flowering plant an adult butterfly or moth visits for fuel. The list is long and the loyalty is low – a painted lady will sip from asters, zinnias, lantana, and dozens of other blooms. Host plants work on entirely different terms.
A host plant is the specific plant species on which a butterfly or moth lays its eggs and from which the hatched caterpillar feeds – almost always exclusively. Monarch caterpillars eat milkweed and only milkweed [1]. A black swallowtail larva eats plants in the carrot family (parsley, dill, fennel, Queen Anne’s lace) and nothing else [1]. A spicebush swallowtail will only develop on spicebush (Lindera benzoin) or sassafras [1]. This is not preference – it is biology driven by millions of years of coevolution. The caterpillar’s digestive chemistry is calibrated to specific plant compounds. Outside that range, the larva cannot feed.
This specialization has one practical consequence: if the host plant is absent from a garden or neighborhood, that butterfly species cannot reproduce there, regardless of how many nectar plants you grow. Why Oaks Dominate: The Tannin Mechanism

The reason is not random. It comes down to chemistry and time.
Most plants defend themselves against insect feeding with highly toxic compounds or intensely bitter chemicals that insects cannot overcome. Oaks chose a different evolutionary path: tannins. Tannins bind to proteins and slow their absorption – a softer defense than outright toxicity. As Tallamy explains it, tannins are “a defense that’s much easier for insects to adapt to” than the chemical weapons other plants deploy [5]. Over millions of years, hundreds of moth and butterfly lineages gradually developed the ability to detoxify or tolerate oak tannins, and one by one, each became an oak specialist.
The second factor is time itself. Oaks have existed across North America for millions of years – far longer than many plant genera colonized after the last glaciation. And individual trees persist for centuries, sometimes much longer. That combination of ancient lineage and individual longevity gave insects enormous windows of exposure in which to specialize. Tallamy notes that oaks are the most productive caterpillar food source in 84 percent of North American counties [5] – a dominance rooted in coevolutionary head start that younger plant lineages cannot match.
The downstream consequence reaches beyond insects. Research shows that 96 percent of nesting songbirds depend on caterpillars to feed their chicks [2]. Tallamy’s data also surfaces a striking concentration: 90 percent of the caterpillars in any given landscape depend on just 14 percent of native plant species, and 5 percent of those powerhouse plants produce 75 percent of all available caterpillar food [3]. Will caterpillars kill my host plants? Rarely, and almost never fatally for established trees and shrubs.
