Citrus Season Has No Deadline: A Month-by-Month Harvest Guide for Lemons, Oranges, and Grapefruit

Ripe citrus won’t sweeten after picking, so color can’t tell you when to harvest. Here’s the real window per variety, and when a freeze forces an early pick.

Most “citrus season” advice is written for someone standing in a grocery store, not someone standing under their own tree. That’s a problem, because citrus behaves nothing like the fruit those calendars are modeled on. A peach left on the branch too long turns to mush in days. A ripe orange can sit on the same branch for weeks, sometimes months, and taste exactly the same the whole time. If you’re staring at a citrus tree full of fruit that’s “probably ready” and trying to decide whether to pick, the calendar is the wrong tool. This guide gives you the actual harvest windows by variety, a real ripeness test, the one popular citrus that breaks every rule below, and what changes when a freeze is forecast.

Why “Citrus Season” Isn’t a Deadline

Citrus is a non-climacteric fruit, which is a fancier way of saying it doesn’t have a post-harvest ripening stage at all. Fruits like bananas, avocados, and peaches are climacteric — pick them a little early and a burst of ethylene gas still finishes the job, converting starch to sugar and softening the flesh on your counter. Citrus skips that step entirely. Once it’s off the tree, its sugar and acid levels are locked in for good. According to UC ANR’s Stanislaus County Master Gardeners, citrus fruit actually keeps longer while it’s still attached to the tree than it does after picking and storing it — the tree is a better fridge than your kitchen counter. Fruit moves through three stages while it hangs there: immature, mature, and eventually overmature, all without falling off or rotting the way a dropped apple would.

That single fact reframes the whole question. “Citrus season” isn’t a deadline you’re racing against — it’s a window that opens gradually and, for most varieties, stays open a long time. The real question isn’t “when do I have to pick this,” it’s “has this actually reached peak flavor yet.” And color won’t answer that for you.

How to Tell When Your Citrus Is Actually Ripe

Taste it. That’s the only test that actually works, and it’s also the one most home growers skip. Rind color is notoriously unreliable because citrus pigment develops on its own temperature-driven schedule that has nothing to do with sugar or acid content — a fruit can turn fully orange or yellow weeks before it’s actually sweet enough to eat, or stay partly green after it’s perfectly ripe in a warm climate. UC ANR’s guidance is blunt about it: color is not a reliable ripeness indicator, and tasting the fruit is the only way to know for sure.

Commercial growers formalize this with a Brix-to-acid ratio — total soluble solids (sugar) measured against titratable acidity. Industry standards put oranges and mandarins at roughly a 7-to-9-to-1 sugar-to-acid ratio for marketable fruit, with grapefruit set lower, around 5-to-7-to-1, since some tartness is expected in a grapefruit. You don’t need a lab to use this. Pick one fruit from the sunniest part of the canopy at the start of your variety’s expected window (see the table below), taste it, and repeat weekly. Sour with a bitter edge means wait. Balanced sweet-tart with juice that runs, not dribbles, when you cut it means go. An inexpensive handheld refractometer will give you an actual Brix number if you want to track it season to season, but your tongue is the instrument that matters.

Same Variety, Different Calendar: Why Region Changes Everything

Heat, not the calendar, drives how fast citrus ripens and how sweet it gets — and that means two trees of the exact same variety can be weeks or months apart depending on where they’re planted. UC Cooperative Extension in Ventura County documents this directly: a Pixie mandarin grown along the California coast ripens six to eight weeks later than the same variety grown inland, and hangs on the tree considerably longer once it does. Grapefruit shows the same pattern in reverse for sweetness — coastal-grown grapefruit tends to stay sour, while the identical variety grown in the hotter Central Valley turns decidedly sweet. If you’re gardening near the coast, in the Pacific Northwest’s marginal citrus zones, or in a container that spends summer somewhere cooler than a full-sun grove, push every window in the table above later and taste-test before you trust the calendar at all.

Blood oranges add a wrinkle that has nothing to do with sweetness. Their signature red flesh comes from anthocyanin pigment, and University of Florida IFAS research found that pigment only develops under a wide swing between warm days and genuinely cold nights — the kind of diurnal temperature drop common in Mediterranean climates and much of inland California, but largely absent in humid subtropical growing regions like Florida. A blood orange grown somewhere without cold nights can be fully ripe, sweet, and ready to eat while still looking pale inside. The Exception: Satsuma Mandarins Don’t Wait

Everything in this guide up to now rests on citrus being patient. Satsuma mandarins are the exception, and it’s a big enough exception that it’s worth its own warning. UF/IFAS’s satsuma mandarin publication states it plainly: satsuma fruit “hold poorly on the tree after maturity” and must be picked promptly once ripe — the opposite of the grapefruit and Valencia orange behavior described above. Left too long, the rind turns bumpy and starts separating from the flesh, and the tree becomes far less tolerant of careless handling. The fix isn’t complicated once you know it applies: satsumas need weekly checking through their September–November window, not the relaxed monthly glance that works for grapefruit.

Satsumas also need clipping, not pulling, more than almost any other citrus — hand-pulled fruit tends to tear a plug of rind loose at the stem, opening a wound that invites decay within days (more on the correct technique below). Interestingly, the same tree that’s this fussy about ripe fruit is also the most cold-hardy commercial citrus available — mature, cold-acclimated satsuma trees have survived temperatures as low as 14–18°F without serious injury, which is one reason it’s a popular pick for growers pushing citrus into marginal cold zones. What Happens If You Leave Fruit on the Tree Too Long

For most varieties, waiting too long costs you flavor quality eventually, and the mechanism is more specific than fruit simply getting old. The main risk is granulation — a physiological disorder where the juice sacs inside the fruit turn hard, dry, and grey-white, with little to no extractable juice left. A peer-reviewed study on late-ripening navel oranges traced the cause to cold winter temperatures during an extended on-tree hold, which trigger changes in the fruit’s cell walls — pectin, cellulose, and lignin build up abnormally in the juice sac tissue, and the enzymes that would normally break that structure down slow down instead. It gets worse once spring arrives: new flowers and shoots start competing with the old fruit still hanging on the tree for water and nutrients, compounding the damage. The study found this was most severe in navel oranges held on the tree past 11 months and in colder, higher-elevation sites — which tracks with why Valencia and grapefruit, both bred and grown to hang long past ripeness in warmer regions, tolerate extended hold so much better than a navel orange does in a marginal cold zone.

The practical takeaway: if you’re growing navel oranges somewhere with real winter cold, don’t treat its on-tree holding ability as license to leave the whole crop until spring. Harvest in reasonable batches through the window instead. When a Freeze Changes the Calculation

Everything above assumes normal conditions. A hard freeze forecast overrides all of it, and the decision to pick early can save both the crop and the tree. UC ANR’s cold-protection research gives real numbers to work from rather than a vague “protect from frost” warning: mandarins can tolerate around 20°F for up to four hours, with real fruit-freezing risk building after several hours near 26°F; oranges see serious damage after four hours at 24°F; grapefruit’s critical threshold sits around 26°F; and Meyer lemon is the most cold-sensitive of the group, with damage starting around 22°F.

Ripe fruit actually handles cold better than green fruit, because the sugar concentrated in ripe juice acts as a natural antifreeze and lowers the temperature at which ice crystals form inside the fruit. That’s the opposite of the usual instinct to “protect the tender young stuff” — here, it’s the fruit that hasn’t sweetened up yet that’s most at risk. And there’s a second reason to pick ahead of a freeze that has nothing to do with the fruit itself: a heavily fruit-loaded tree is less cold-tolerant overall than a lightly loaded one, so stripping ripe and near-ripe fruit before a hard freeze protects the tree’s wood and future crop too. How to Harvest Without Damaging Next Year’s Crop

Reach for hand pruners, not your hand alone. Clip the stem close to the fruit rather than twisting or pulling it off — pulling risks stripping bark and snapping off the small fruiting twigs that would have produced next year’s flowers, and it commonly causes “plugging,” where a plug of rind tears loose from the fruit at the stem end. That torn spot is an open door for decay organisms, and it’s a particular risk on satsuma mandarins and other thin-skinned varieties that tear rather than snap cleanly. A short stub of stem left attached actually helps: it seals the wound point and extends storage life once the fruit is off the tree.

Work from the bottom of the canopy up. Ground-level and low-hanging fruit face the highest frost exposure on cold nights and the greatest risk of brown rot from soil splashing up during rain, so picking those first — and checking them most often — reduces losses across the whole harvest window.

Not necessarily. Rind color depends on temperature and develops somewhat independently of sugar and acid content. Taste-test instead of judging by color, especially in warm-winter climates where citrus can stay green-shouldered while fully ripe underneath.
