Cut open a Casper or Gretel eggplant and there’s no need to salt it, sweat it, or soak it in milk. The pale flesh tastes clean and faintly sweet straight off the cutting board — something that isn’t true of most standard purple aubergine, especially once it’s a day or two past its prime. Why Casper and Gretel Taste Different From Purple Aubergine
Eggplant bitterness has two documented sources. The first is a phenolic compound called chlorogenic acid, concentrated in the skin, which is also responsible for the rapid browning that happens when cut flesh hits air. The second is a pair of steroidal glycoalkaloids — solasonine and solamargine — that build up in the flesh and seeds as the fruit matures. Together they account for the sharp, slightly numbing edge that makes an overripe purple eggplant unpleasant to eat raw.
A 2022 study in the peer-reviewed journal Molecules measured chlorogenic acid directly in eggplant peel across three cultivars of different colors. The white cultivar tested contained just 0.69 mg/kg of free chlorogenic acid in its skin. The purple cultivar in the same study contained 27.55 mg/kg — nearly 40 times more — and the black cultivar came in at 6.08 mg/kg. Total phenolic content followed the same pattern: the black cultivar’s peel measured roughly double the white cultivar’s. The researchers’ conclusion was blunt: pigmented eggplant carries significantly more phenolic and antioxidant compounds than white eggplant does, in the same tissue where bitterness concentrates.

That study didn’t test Casper or Gretel by name — it used different named cultivars bred in Turkey — but the mechanism it isolated is tied to pigmentation itself, not to any one variety. Casper and Gretel are unpigmented for the same underlying reason those research cultivars were: a disruption in the anthocyanin pathway, the same pigment system responsible for purple skin. Where that pathway is switched off, the skin comes out white, and the phenolic load that normally rides along with it drops sharply too.
The glycoalkaloid side of the story is less settled. A 2019 survey in the journal Toxins confirmed that solasonine and solamargine — not solasodine, which is only their shared molecular backbone and isn’t present in fruit in meaningful amounts — make up more than 70% of eggplant’s total glycoalkaloid content and are directly responsible for bitterness in the pulp. But that research compared a bitter commercial purple variety against a milder landrace, not white against purple specifically, so there isn’t yet a clean, peer-reviewed number showing how much less glycoalkaloid white cultivars carry. What’s established is the compound family and its role; the color-specific comparison for glycoalkaloids is still an open question. Chlorogenic acid, by contrast, has been measured directly — and that’s the compound with the clearest, best-documented link to why white eggplant tastes milder.
Fruit age still matters on top of all this. Iowa State University Extension notes that bitter compounds concentrate in the seeds and flesh as eggplant matures past its prime — a young Gretel picked at three inches has barely begun building up either compound family, purple or white. Cooking Casper and Gretel

Standard purple eggplant is usually salted before cooking specifically to draw out that compound along with excess moisture — skip the step with a young Casper or Gretel and the texture holds up fine, since there’s much less of the compound to remove in the first place. The trade-off shows up in browning instead of flavor: because chlorogenic acid is also what oxidizes and turns cut eggplant flesh brown, white varieties stay pale far longer after slicing, which makes them a better fit for dishes where raw or lightly cooked color matters, like a crudo or a quick pickle.
Casper’s mild, faintly mushroom-like flavor holds its own in dishes with bold seasoning — Sichuan-style stir-fries, curries, or anything built around garlic and chile, where a purple variety’s slight bitterness would otherwise compete with the sauce. Gretel’s small size and thin skin make it well suited to halving and roasting whole, or grilling on skewers without peeling first. The Trade-Off: What White Eggplant Gives Up
The same pigment pathway that carries chlorogenic acid into purple and black skin also produces nasunin, the anthocyanin responsible for eggplant’s deep purple color and one of its better-studied antioxidants. Because Casper and Gretel don’t produce that pigment, they don’t carry nasunin either. The Molecules study measured this directly: white eggplant’s anthocyanin content ran roughly 3,200–8,500 g/kg, compared to 6,200–16,800 g/kg in the black cultivar — and total antioxidant capacity followed the same downward trend across every measure the researchers used.
This isn’t a reason to avoid white varieties — nasunin is one antioxidant among many that vegetables provide, and eggplant isn’t most gardeners’ primary source of it. But it’s worth being accurate about the trade-off rather than treating white eggplant as a strict upgrade.
