Once soil temperatures cross 80°F, potato tubers stop forming entirely — and zone 9 soil hits that threshold by late May or early June in most locations. Plant in March like a zone 5 gardener and you’ll have perfectly healthy foliage with almost nothing underground when summer arrives.
What most guides miss is that zone 9 actually has two planting windows that cooler climates can’t access. Why Zone 9 Grows Potatoes on a Different Schedule

Spring window — primary crop. This is when zone 9 earns its unusual advantage. In zone 9b locations like South Texas’s Rio Grande Valley, Texas A&M AgriLife data shows planting beginning as early as late December. Count 65–100 days forward from planting — depending on variety — and your harvest arrives before soil temperatures spike in late spring.
Fall window — second crop. Plant late August through early September, choosing varieties that need no more than 65–75 days so harvest lands before mid-November frost. One critical difference from spring planting: use whole small seed potatoes rather than cut pieces. Red LaSoda is the lowest-risk choice for zone 9 first-timers. UF/IFAS trials across Florida showed average marketable yields of 264 cwt per acre with 86% of tubers in preferred size classes — a variety that has been performing in hot, humid southern conditions since USDA released it as a warm-climate selection in 1953. Dark Red Norland is the speed play. At 65–70 days to harvest, it gives you the maximum buffer against summer heat in the spring window. The tradeoff is slightly smaller tubers than midseason varieties — a guaranteed harvest beats a gamble on a 90-day variety in a warming climate every time.
For russet fans: standard Russet Burbank at 120+ days isn’t practical for most zone 9 home gardens. Century Russet handles heat better — Texas A&M notes it shows heat tolerance under commercial field conditions — but it requires consistent irrigation management most home setups can’t reliably deliver. Stick with red and gold varieties for predictable results.
Soil Prep and Planting
Zone 9’s warm, sometimes wet winters make drainage the first priority. Potatoes sitting in waterlogged soil rot before they sprout. UF/IFAS recommends building beds at least 10–12 inches above the surrounding soil level. Raised beds and deeply mounded rows both deliver this, and they make hilling significantly easier than flat-ground planting.
Aim for a soil pH of 5.0–6.0. Above 6.5, potato scab (Streptomyces scabies) becomes a serious problem in zone 9’s warm soil — alkaline conditions favor the scab organism and also reduce phosphorus availability, slowing early root development. Don’t wait beyond 3 weeks in zone 9 though — soil temperatures are rising, and prolonged warmth can cause hollow heart in late-dug tubers.
