The Botanical Split: Why Three Celery Types Exist
All three types come from the same wild species — Mediterranean smallage, Apium graveolens. The differences between them aren’t different plants. They’re the result of centuries of selective breeding applied to different parts of the same plant, and a 2025 genomics study published in Nature Communications identified the specific genetic changes that set each group apart.
Stalk celery (Dulce Group): Breeders selected for solid, plump petioles — the leaf stalks. A NAC transcription factor gene (Agrc04g007090) is present in all hollow-petioled wild relatives but absent in every modern Pascal variety. The loss of this gene correlates directly with the dense, snapping texture that defines stalk celery. Pascal types emerged more recently than celeriac, with modern forms developing from 16th-century Italy.

Celeriac (Rapaceum Group): Breeders selected for an enlarged hypocotyl — the stem tissue between the seed leaves and the true root system. A bHLH transcription factor gene (Agrc02g006400) drives this expansion. The edible celeriac “root” is not botanically a root at all. It’s stem tissue that swelled under selection pressure. The true hair-like roots attach below and grow into the soil.
Leaf celery (Secalinum Group): The least modified of the three groups. Because leaf celery remains closest to wild smallage, it retains the high essential-oil concentration of the original plant — which explains why a tablespoon of chopped leaf celery delivers several times the aromatic punch of the same volume of Pascal stalk.
Understanding this split matters practically: you’re not choosing how to grow the same plant. You’re choosing between three cultivar groups with different days to maturity, temperature tolerances, and harvest expectations.
Pascal Celery — The Standard Stalk (Dulce Group)
Pascal is the most demanding celery type but produces the familiar long, crisp, solid stalks suited to raw eating, dipping, and cooking. MSU Extension rates celery as “Difficult” among home garden vegetables — high nutrient and water demands, combined with a narrow temperature window, leave little room for inconsistency.
Temperature is the central variable. USU Extension puts the optimal range at 55–65°F. Growth inhibits below 36°F. Above 85°F, stalks turn fibrous and woody rather than remaining crisp. The critical risk: Oregon State University Horticulture reports that 10–14 consecutive days below 45°F triggers the plant’s biennial response — it vernalizes and bolts to seed rather than building stalks. This is the single most common reason Pascal celery fails for home gardeners who transplant too early.

- Tall Utah 52-70 (100–110 days): Classic long-stalked variety with cold and disease resistance. Best in zones 4–7 where reliable cool springs give the full season it needs.
- Golden Boy (85–90 days): String-free petioles with a tender texture. Good option when fiber is the persistent problem.
- Tango (85–90 days): Sweet-flavored compact hybrid suited to smaller beds and containers.
The Self-Blanching Subtype (Golden Self-Blanching, ~105 Days)
Traditional blanching involves wrapping stalks with paper or mounding soil for 2–3 weeks before harvest, blocking light and reducing chlorophyll to produce paler, sweeter, more tender petioles. Golden Self-Blanching does this through plant spacing: set at 9-inch intervals in a block rather than single rows, inner plants shade each other automatically. No earthing up required. The result is a noticeably sweeter, milder stalk. The trade-off is flavor depth — blanched stalks lack the savory intensity of green Pascal.
Celeriac — Growing for the Root (Rapaceum Group)

Celeriac is often dismissed as “zones 8–9 only” or too slow for home gardens. Both claims are wrong. The zones 8–9 figure describes mild-climate year-round production, not the viable range for home gardeners. Celeriac grows successfully in zones 3–9 when spring-planted for fall harvest. Start seeds indoors 10 weeks before your last frost date; transplant when air temperatures reach 65–75°F and soil hits 60°F. UC Cooperative Extension puts days to maturity at 100–150 days from transplant — a long season, but one that ends with a vegetable that stores through winter.
Celeriac is more forgiving than Pascal once established. The plant isn’t trying to build tender petioles — it’s expanding a stem base, and it tolerates minor temperature variation and brief moisture stress better than stalk types.
Harvest small. Texas A&M AgriLife Extension recommends harvesting celeriac while still relatively small — the larger it grows, the woodier the interior becomes. Three to four inches in diameter is the sweet spot. After that, quality declines.
Frost improves flavor. A light frost — not a hard freeze — converts starches in the hypocotyl to sugars, sweetening and deepening the flavor. Growers in zones 5–7 who leave celeriac in the ground through the first light frosts before pulling get measurably better results at the table.
Storage: After trimming side roots and leaves close to the swollen base, store at 32°F with high humidity. Under those conditions, celeriac keeps for months through winter — far longer than Pascal stalks, which deteriorate within two to three weeks refrigerated.
Growing tip — remove suckers: As the hypocotyl enlarges, side shoots develop around the base. Remove them when they appear. Redirecting energy from sucker production into the hypocotyl adds measurably to final root size and density.

- Brilliant: Nearly fiberless, white interior. The European standard and the best all-around beginner choice for its clean flavor and reliable yield.
- Diamant: Stands more upright above ground than most varieties — easier to harvest cleanly without digging damage. Good storage.

Leaf Celery — Quickest Harvest, Strongest Flavor (Secalinum Group)
Leaf celery reaches harvest in 60–80 days — roughly half the season of celeriac and faster than most Pascal varieties. It’s also cut-and-come-again: harvest outer leaves throughout the season and the plant continues producing until frost kills it. This is the type to grow if you’ve struggled with Pascal. Leaf celery (var. secalinum) tolerates partial shade and a wider temperature range than stalk types. USDA zones 5a–8b are the primary range; in zones 6–8, harvest often extends into fall and early winter when Pascal would have long since bolted or been pulled. The seeds need light to germinate — press them into the soil surface rather than covering them.
Flavor intensity: Leaf celery delivers significantly more aromatic punch than Pascal stalk. Because this group remains genetically closest to wild smallage, it retains the high essential-oil profile of the original plant. Which Celery Type Should You Grow?
Short growing season (zones 3–5): Leaf celery or Conquistador Pascal. Both reach harvest under 90 days. Celeriac is viable in zones 4–5 when started indoors in late February or early March, but the timing is tight and any delay pushes harvest into cold weather.
Pascal but struggling with bolting: Switch to Conquistador or Tango, both of which handle brief warm spells better than long-season varieties like Tall Utah. Transplant only after nighttime temperatures are consistently above 50°F — rushing is the primary cause of Pascal failure.
Minimal-maintenance kitchen herb: Leaf celery. One spring planting, cut-and-come-again harvest from late spring through early winter in most zones. Grows like parsley, demands far less than Pascal.
Winter storage / serious kitchen use: Celeriac. Start Brilliant or Diamant indoors in February or March for most US zones. Leave in the ground through the first light frosts, then harvest and store at 32°F for months. Pair it with a crop rotation plan — celeriac is a heavy feeder and benefits from being moved each season.
Container growing: Tango Pascal (compact growth habit) or leaf celery at 10-inch spacing. Celeriac requires too much soil depth and volume for most container setups to produce decent-sized roots.
