Step 1 — Find the right stem. Work from the top third of the plant first. The newest growth at the top tends to have the most concentrated essential oils, and removing it first keeps the plant’s energy flowing outward rather than upward.
Step 2 — Locate the highest leaf node on that stem. Look for the joint where a full pair of leaves attaches to the stem. The axillary buds live right in those leaf angles — you can sometimes see tiny green nubs there if the plant is actively growing.

The flavour in the remaining leaves becomes sharper and more bitter as the plant redirects its resources toward reproduction.
