Once you have your first frost date, the calculation is simple. But most gardeners make one critical error: they trust the days-to-maturity number on their seed packet without adjustment.
Why your seed packet’s days-to-maturity number is wrong in August
Seed packet maturity times assume optimal spring conditions: warm soil, long days near the summer solstice, and peak photosynthesis rates. In late summer and fall, all three of those conditions work against you. As temperatures drop, plant respiration slows — and since cellular respiration drives root expansion, leaf development, and fruit set, slower respiration means slower growth. The formula for frost-hardy crops (kale, carrots, beets, spinach, broccoli, cabbage, chard):
Days to maturity + 14 days (fall factor) = days to count back from first frost date
The formula for frost-tender crops (beans, cucumbers, squash — anything killed by frost):
Days to maturity + 14 (fall factor) + 14 (frost buffer) = days to count back from first frost date
A worked example: you are in Zone 6 with a first frost around October 31. You want to grow kale, which matures to baby leaves in 55 days. Kale is frost-hardy, so: 55 + 14 = 69 days. Count back 69 days from October 31 and you get August 23. Any kale seed sown by August 23 in Zone 6 will reach harvestable size before hard frost.
Now carrots (75 DTM, frost-hardy): 75 + 14 = 89 days back from October 31 = August 3. Carrots need to be in the ground earlier in the season than you might expect — their relatively long maturity time pushes the sow-by date deep into July or early August depending on your zone.

Start in July — Long-Season Crops That Need a Head Start
Long-season vegetables need 75 to 130 days to mature. If your first frost falls in mid-October (Zone 5), these crops need to be in the ground by early to mid-July — and most should go in as transplants started indoors, not as direct-sown seed.
Brussels sprouts (90–100 DTM)
The slowest fall crop on this list. For a Zone 5 harvest in October, transplants need to be in the ground by the first week of July — which means starting seeds indoors in late May. The investment pays off: Brussels sprouts are among the vegetables most dramatically improved by frost. A few nights below 28°F convert significant starch to sugar in the mini-heads, producing a noticeably sweeter, nuttier flavor than supermarket sprouts harvested before frost. How to Prepare Summer Soil for Fall Planting
Summer beds are depleted. Tomatoes, peppers, and squash are heavy feeders that pull significant nitrogen and phosphorus from the soil over a full season. Before you plant your fall crops, the bed needs both nutritional replenishment and physical preparation.
Amend the soil before you plant
Pull spent crops and their root systems. Work 2–3 inches of finished compost into the top 6–8 inches of soil — this simultaneously replaces nutrients, improves drainage in clay soils, and improves moisture retention in sandy ones. If your soil is compacted from summer foot traffic, loosen it to 10–12 inches before planting. Texas A&M AgriLife Extension recommends applying a balanced slow-release granular fertilizer at 2–3 pounds per 100 square feet at bed preparation, which provides a gentle nutrient reserve without forcing overly lush growth that susceptible to aphids.
The soil temperature problem for cool-season crops
This is the issue that trips up most gardeners trying to establish fall beds: summer soil is too hot for some cool-season crops to germinate. Lettuce germination drops sharply above 75°F and essentially stops above 80°F. Spinach has a similar ceiling. In late July or early August, surface soil in a full-sun bed can stay above 85°F through the afternoon.
Three approaches that work:
- Evening sowing: sow seeds in the evening after watering. The soil temperature drops overnight, and seeds get 8–10 hours of cooler germination conditions before the next day’s heat arrives.
- Shade cloth: lay 30–40% shade cloth directly on the bed for 5–7 days after sowing. This drops surface soil temperature by 10–15°F and holds moisture. Remove it once seedlings emerge.
- Indoor germination: start lettuce and spinach in cell trays on a cool indoor shelf (basement, north-facing room). Transplant 2-week-old seedlings once the outdoor heat breaks in early September. This bypasses the germination problem entirely.
Brassicas, carrots, beets, and chard germinate more reliably in summer soil — they have higher germination temperature ceilings and are less sensitive to heat stress during establishment.
Watering in late summer
Germinating seeds and seedlings need consistent moisture for the first 2–3 weeks. In August heat, that often means daily watering until plants establish. A light mulch of straw or shredded leaves after germination retains moisture and shields soil from temperature swings. Once fall rains arrive — typically September in most of the US — watering needs drop substantially.
Succession Planting for Continuous Harvest Through November
Planting everything at once gives you everything at once — a glut of kale in October followed by bare beds. Succession planting staggers your harvest so you are picking fresh produce every week from now through first hard frost.

For medium-speed crops like kale, beets, and chard, one or two successions two to three weeks apart is enough — their longer maturity period means the gap between plantings shows up as a smaller window difference in harvest.
Row covers extend your season by four to six weeks
A single layer of floating row cover (1.5 oz weight) raises the temperature under the fabric by 4–8°F and blocks frost on still nights. In Zone 5, that can extend your harvest from mid-October to late November. In Zone 6, from early November to December. In warmer zones (7 and south), cool-season vegetables can run through December and into January without protection. Lettuce, spinach, kale, and chard will keep growing as long as night temperatures stay above 20°F — and with row cover, even lower.

When is it too late to plant fall vegetables?
