Zone 8 Squash: Two Crops a Year Using March and August Planting Windows

Zone 8 gardeners grow squash like everyone else — plant in spring, harvest in summer, pull the vines by August. That’s one crop per year. With 8–9 frost-free months, zone 8 supports two full squash harvests: spring plants going in around March and a separate fall crop planted in August that runs through November. No other warm-climate crop demonstrates zone 8’s advantage as clearly as squash.

Zone 8 divides into two sub-zones with slightly different frost timing. Zone 8a covers northern Georgia, central Texas, and parts of the Pacific Northwest coast — your last frost falls around March 1–15, so target outdoor planting around March 15. Zone 8b covers the Gulf Coast, coastal Georgia and South Carolina, and lower Alabama — last frost around February 15–March 1 means you can plant from March 1 onward.

Squash needs soil temperature of at least 65°F before seeds germinate reliably. If your March runs cold, follow the soil thermometer rather than the calendar. Direct sow 1 inch deep — transplants are not recommended for squash because the taproot resents disturbance and direct-seeded plants consistently outperform transplants in extension trials. Space summer squash mounds 4 feet apart; winter squash needs 6–8 feet between mounds to accommodate the long vines.

Fall Planting: Zone 8’s Most Underused Advantage

Texas A&M AgriLife Extension’s fall vegetable gardening guide specifies these dates for zone 8 (their Zone III designation):

  • Winter squash: plant by August 10
  • Summer squash: plant by September 10

The reasoning is straightforward: count backward from your first frost date. Zone 8a first frost arrives around November 15; zone 8b around December 1. Winter squash needs 85–100 days — an August 10 planting matures by mid-November. Summer squash takes 35–50 days, giving a full September-through-November harvest from a September planting. UGA Cooperative Extension recommends squash for August fall planting in Georgia as well, specifically choosing varieties with downy mildew resistance for late-season crops.

Fall crops offer a secondary benefit: they avoid peak mid-summer heat and face a declining squash vine borer population as autumn temperatures drop. The spring crop carries the pest pressure; the fall crop largely sidesteps it.

Best Squash Varieties for Zone 8

The most important variety decision for zone 8 gardeners has nothing to do with flavor or size — it’s the biological species. Cucurbita moschata varieties (butternut, Tatume, Cushaw) have hard, solid stems. Squash vine borer larvae bore into the soft hollow tissue of C. pepo stems — zucchini, acorn squash, most pumpkins — and cut off water transport, collapsing the plant. They can’t penetrate moschata stems the same way. Texas A&M entomologists specifically recommend Tatume squash for Texas gardeners because of its hard stem and strong SVB resistance, alongside good flavor and vigor. The University of Florida recommends Seminole pumpkin and calabaza — also moschata — for warm-climate growers who want a reliable harvest even with pest pressure.

For spring plantings, C. pepo varieties like Black Magic and Dixie work fine — the key is planting early so the main harvest lands before the worst SVB pressure peaks. For fall plantings, moschata types are the better call: they’re in the ground through the tail end of SVB season and their solid stems provide a structural advantage where C. pepo plants would struggle.

Squash Vine Borer: Zone 8’s Two-Generation Problem

Northern gardeners fight one squash vine borer generation per year. Zone 8 gardeners deal with at least two overlapping generations — Texas A&M documents adults active from April/May through November/December in Texas, with the pest never fully stopping between generations. This sustained pressure is why variety selection and planting timing matter more in zone 8 than anywhere north of it.

The biology: the adult clearwing moth — red and black, often mistaken for a wasp — lays flat, reddish-brown eggs singly at the base of squash stems. Larvae hatch within a week and immediately bore into the stem. They feed inside for 4–6 weeks, cutting off water and nutrient transport. The first visible sign is sudden, complete wilt that doesn’t respond to watering. By the time the plant collapses, the larvae have already been feeding for weeks. This is why cutting out borers only works if you catch it early, and why prevention beats treatment every time.

Zone 8 SVB management strategy:

  1. Grow C. moschata varieties. Tatume, Waltham Butternut, and Cushaw are your structural insurance. Their solid stems deny larvae a soft entry point that C. pepo provides.
  2. Plant the spring crop early. A March planting means your main harvest arrives in May–June, ahead of peak SVB pressure. A late-May planting leaves you harvesting right into the worst two-generation overlap.

  4. Rotate beds annually. SVB larvae overwinter up to 2 inches deep in soil directly under their host plant. Moving squash to a fresh bed each spring breaks the overwintering cycle.
  5. Till soil after harvest. Turning the soil after pulling spent plants exposes overwintering larvae and interrupts their survival.

Soil Preparation and Fertilizing

Squash repays soil investment more visibly than almost any other vegetable. UGA Cooperative Extension recommends incorporating at least 4–5 inches of organic matter tilled 8–10 inches deep before planting. Target a soil pH of 5.8–6.8 — below this range, phosphorus becomes unavailable even when fertilizer is present; above 6.8, micronutrient uptake drops. Add lime if your pH reads below 6.2.

For planting fertilizer, UGA recommends 3 tablespoons of 5-10-15 per planting mound. An all-purpose 8-8-8 or 10-10-10 works similarly. After flowering begins and fruits start to size, side-dress with additional fertilizer — this is the phase of highest demand. Nitrogen keeps foliage growing; phosphorus and potassium support fruit development and root function.

One zone 8-specific adjustment: apply 1/4 cup of gypsum per plant at planting time. Alabama Cooperative Extension recommends this specifically to prevent blossom-end rot. Watering Squash Through Zone 8 Summers

Squash needs 1–1.5 inches of water per week, with demand increasing during peak heat. The method matters as much as the amount: drip irrigation and soaker hoses keep foliage dry, which significantly reduces powdery mildew — a major pressure in zone 8’s warm, humid conditions. Overhead watering late in the day leaves foliage wet overnight, creating the humid surface conditions where fungal spores germinate fastest.

Expect summer squash to slow or pause fruit production during July and August when zone 8 daytime temperatures consistently exceed 95°F. This is normal. Extreme heat renders pollen non-viable, causing flowers to drop without setting fruit. The plant doesn’t die — it’s waiting for temperatures to moderate. The fall crop approach solves this by restarting fresh plants in September’s cooler conditions rather than trying to push midsummer plants through weeks of infertility.

Apply 3–4 inches of mulch (straw or wood chips) around plants. Mulch holds soil moisture, moderates root-zone temperature, and reduces splash from rain and irrigation that carries soil-borne fungal spores onto lower leaves. It’s a simple step that meaningfully reduces disease pressure through zone 8 summers.

Harvesting Zone 8 Squash

Summer squash is ready at 35–45 days. Harvest when fruits reach 4–6 inches long with a glossy, unblemished skin. Once the skin turns dull, texture and flavor have already declined. Harvest every 2–3 days during peak season — leaving overripe fruits on the vine triggers the plant to reduce new production, since it interprets ripening seeds as reproductive success.

Winter squash needs 80–120 days. Harvest when the rind resists fingernail pressure, the stem begins to dry, and the fruit has developed its mature coloration — Waltham Butternut goes tan-beige, Cushaw shows its green-and-white striping, acorn deepens to dark green or orange. Leave a 2-inch stem stub when cutting.

Why does my squash wilt and die suddenly in summer?
