The honest answer is that no peer-reviewed study has actually confirmed or ruled out that mechanism[4] — the “frost makes rhubarb toxic” line is garden folklore that has outrun the science.
What extension horticulturists actually recommend is simpler: judge the stalk, not the myth. Wait two or three days after a hard frost, then inspect the plant. If a stalk has gone soft or mushy, or its attached leaf is browned and wilted, pull it and compost it. If the stalk is still firm and upright, it’s fine to eat[4]. In practice, the frost has to be hard enough to visibly wreck the plant before there’s any real question of edibility — an ordinary light frost in the high 20s to low 30s Fahrenheit rarely does that.
