By the time that shoulder is easy to spot, the root underneath may already be a few days into a heat-driven process that turns crisp flesh into a spongy honeycomb. The real skill isn’t spotting a swollen top; it’s telling apart two very different situations — “not ready yet” and “already going hollow” — from a single, non-destructive check.

Why Radishes Go Pithy or Hollow If You Wait Too Long

The spongy, air-pocketed texture in an overgrown radish isn’t simple old age — it’s a documented physiological response to heat, and it starts well before you’d notice anything from above ground. A 2021 review of radish physiological disorders published in the peer-reviewed journal Plants synthesizes decades of research on this: soil temperatures around 30.7°C (about 87°F) sustained during days 16 through 30 after sowing measurably reduce cytokinin activity in the root — the plant hormone responsible for driving new cell division in the root’s core. With fewer new cells forming, small internal air pockets (aerenchyma) begin appearing; the same body of research found these become visible under magnification by day 21, with the percentage of hollow tissue climbing steadily from day 28 onward, continuing right up to harvest.

That timeline overlaps directly with the tail end of the spring days-to-maturity window (25–35 days). In a hot week, “ready to harvest” and “starting to hollow” aren’t sequential stages — they’re converging at the same time. That’s the practical reason the shoulder test matters more in warm weather than the calendar does: if daytime soil temperatures have been pushing past 85°F, start checking at the early edge of the window (day 21–25) rather than waiting for the textbook day-30 mark.

Days 16 through 30 fall late enough in a radish’s short life cycle that the root is already well into active thickening for most types — which is likely why heat during exactly this window does more damage than the same heat earlier, when the root has less cell division riding on it, or later, once size is largely set. A light layer of mulch over the row won’t cool the air, but it moderates soil temperature swings during that window — as a general guideline, that’s one reason mulched plantings often hold quality a little longer than bare soil in the same bed during a hot stretch.

The One-Test Rule: When It’s Fine to Sacrifice a Single Radish

Iowa State University Extension describes “periodically checking development by pulling a sample plant” as a normal part of monitoring a bed — this is not the same as pulling every radish to look. The rule that keeps it from turning into that: pull from the end of a row or a thinned-out gap, never from the middle of a dense planting, and do it once per check-in rather than sampling several roots on the same visit.

In the first 20 days or so after sowing, don’t bother checking at all, even if the foliage already looks full — roots haven’t meaningfully sized up yet regardless of how tall the tops are, and a pull at this stage only tells you that you wasted a radish.

Harvesting Without Damaging the Rest of the Row

Grip the foliage close to the soil line and pull straight up in one continuous motion. Twisting or yanking at an angle snaps the taproot tip, and a broken tip left behind in the soil gives rot organisms a route to the roots still growing nearby.

For daikon and other winter types with long taproots, loosen the soil a few inches to the side with a garden fork before pulling, rather than forcing it straight out. These roots can run 8 inches or more, and forcing a long taproot through compacted soil is what snaps the bottom off and leaves it behind. Harvesting in the morning, while soil moisture is still highest from overnight, also makes for cleaner pulls and crisper texture by the time the radish reaches the kitchen.

Trim the leafy tops to about half an inch as soon as you’re done pulling, rather than leaving them attached until you’re ready to use the radishes. Left on, the greens keep drawing moisture out of the root even after harvest, which is a fast route to the same limp texture you were trying to avoid by harvesting on time in the first place. As a general guideline, refrigerated in a sealed bag, trimmed spring radishes hold their crunch for about a week to ten days; the greens themselves are edible too and cook down quickly, similar to spinach.
