The garden strawberry (Fragaria × ananassa) is an octoploid — its cells contain eight complete sets of chromosomes (56 total), inherited from four different diploid wild ancestors, including F. vesca itself. Eight genomes means eight copies of every fruit-development gene, and selective breeding since the 18th century has steadily pushed that genetic redundancy toward larger and larger fruit cells. Four esters found exclusively in F. vesca — including myrtenyl acetate and trans-pinocarvyl acetate — add further layers of rose, pine, and herbal character that garden strawberry esters simply don’t generate.
This is why alpine strawberries are commonly described as tasting of pineapple and rose, or like a strawberry that is trying harder. The alpine isn’t a more concentrated version of the same flavor profile — it’s a genuinely different flavor architecture. A separate genetic study of F. vesca volatiles identified over 100 distinct flavor compounds in the wild fruit, including the terpenoid nerolidol (a floral, woody note), furanones (sweet and caramel), and lactones (peach-like character). The cultivated hybrid, shaped by generations of selection for size and shelf life, has largely traded that complexity for volume.
One practical catch: alpine flavor peaks at full ripeness and deteriorates fast. A fully ripe alpine left on the plant in warm weather goes soft and overripe within a day. Pick daily during peak season and eat the same day for maximum impact.

Standard June-bearing garden strawberries are short-day plants.
