Its vitamin E content (22.2 mg/100g) is more than twelve times spinach’s 1.8 mg. It also delivers 494 mg of potassium per 100g, and at 93% water, it’s actively hydrating on a hot day.
For salad use, it’s the closest thing on this list to the crisp-crunchy texture of romaine. Raw stems and leaves toss directly into a bowl; no prep needed. The flavor is lemony, slightly salty, and clean — it pairs especially well with citrus vinaigrettes and grain-based bowls.

7. Orach: The Sleeper Pick
Orach (Atriplex hortensis, also called mountain spinach or French spinach) may be the most underused salad green in North American home gardens. It shows up in specialty seed catalogs, occasionally in restaurant gardens, and almost never in mainstream gardening coverage.
The practical case is solid: orach is substantially less likely to bolt in summer heat than true spinach, tolerates drought, alkaline soil, and even slightly salty conditions that would stress other greens, and produces crisp, mild leaves in 40–60 days.
